origin

aruco began in 2006 with fourteen farmers from the municipality of corquín, in the copán department, who decided to work together. today it brings together more than 200 producers — and far more people than that, counting the families who grow and pick alongside them.

together that is around 1700 hectares at 1000–1600 metres above sea level. the varieties run wide, from the classics to the rare: bourbon, caturra, catuai, ihcafe 90, lempira, maragogype, pacamara, gesha, parainema.

the cooperative takes on what a single farmer cannot: agronomy support, financing, and getting the green coffee onto the international market. that is what lifts yields, makes the farming gentler on the land, and keeps the money in the region — aruco puts it back into local schools, community projects and health centres.

aruco runs its own mill, with modular sections for washing and drying. fermentation uses equipment built to keep water consumption to a minimum, and the hot air for the dryers comes from burning coffee husk in dedicated furnaces — the by-product of processing goes back into the process as fuel.

this particular lot was picked by farmers in the villages of gualme, los naranjos and potrerillos, in the municipality of corquín. coffee from this region carries its own geographical indication — honduran western coffees (hwc).

process

washed is the cleanest way to show the bean itself rather than the fruit. the cherry is pulped right after picking, and what remains of the sticky mucilage is removed through fermentation and washing. the bean goes to the drying beds bare — so what stays in the cup is what the variety, the soil and the altitude gave it, with no layer of fruit on top.

at the aruco mill this stage is built to spare water: the fermentation equipment is designed for minimal consumption, and the dryers run on hot air from burning coffee husk.

the result is a transparent, structured profile with clear acidity and a clean finish.

catuai is a central american classic — a compact, productive tree bred from caturra and mundo novo, giving an even, balanced cup.

parainema is a honduran selection from the sarchimor line, resistant to leaf rust. it was first planted to keep farms alive, and then turned out to be capable of a serious cup at altitude, with a tea-like delicacy of its own.

a dry, lightly tannic black tea base, a spiced herbal note behind it, and dried apricot opening up at the end — soft, concentrated stone-fruit sweetness. restrained acidity, light and clean body. a coffee for filter and an unhurried morning rather than for milk.

storage

at room temperature

in a sealed bag at room temperature coffee stays fresh for 1–2 months. once opened this shortens — buy the amount you'll drink within one or two weeks.

ground coffee loses its aroma within minutes, so grind the beans right before brewing.

in the freezer

in a sealed airtight bag coffee keeps in the freezer for up to six months. keep it away from strong odours — coffee absorbs them easily.

thaw only once, at room temperature over 10–12 hours; do not refreeze.

the main rule

keep coffee away from light, heat, moisture and strong smells, in a tightly closed pack. don't pour it into clear jars kept in the light. buy it freshly roasted and drink it while the flavour is at its peak.
