origin

in the fundador area of palestina municipality, in southern huila, sits a washing station with a telling name — "the bridge". there is a real bridge over the river nearby, but the name means more than that: the station connects colombia's smallholder farmers to the global specialty market.

it started in 2018 as a social project by the exporter clearpath coffee. the problem it solves is a familiar one in the region: a small farm has neither the equipment for post-harvest processing, nor spare cash, nor the freedom to gamble a harvest on experimental fermentation.

the model is simple. el puente buys freshly picked cherries from local growers and pays the price of already-processed coffee. everything after that is on the station: fermentation, drying, quality control and sales worldwide. the farmer is paid right after the harvest and carries none of the processing risk.

the station works mainly with natural and honey processing.

process

honey is the middle ground between washed and natural processing. after pulping, the bean keeps its layer of sticky mucilage and dries on raised beds with regular turning: how much mucilage is left and how long the drying takes is what gives the method its "colours" — from white to black honey. it is labour-intensive and unforgiving, but it brings honeyed sweetness, dense body and soft stone-fruit tones without losing structure or clarity.

flavor profile

the first thing you read is the acidity — bright, juicy pomegranate with a light tannic edge. it softens into ripe pear, and the finish settles on plum: darker, denser, carrying the honeyed sweetness of the process. round body, long clean finish. holds its shape as filter and as espresso.
