the coffee you drink is born in a roaster — a roasting machine. to most people it's a «black box»: green goes in, brown comes out. in fact inside is a precisely controlled process of heat transfer, with a person steering that process by instruments and by taste. let's take a short look at how it works.
the roaster's main parts
a classic drum roaster has several parts:
- the drum — a rotating metal cylinder in which the beans are constantly tumbled so they heat evenly and don't scorch on one side
- the burner (heat source) — under the drum; the roaster controls its power
- airflow / extraction — pulls hot air through the drum and carries off smoke and chaff; air is a separate control lever
- the cooler — a tray with a mesh and a fan: as soon as the beans are done, they're tipped in and quickly cooled with airflow to stop the roast at the right point
- instruments — above all temperature probes (bean temperature BT and air/environment), and in modern setups software (like artisan) that draws the roast curve in real time.
how a green bean becomes aromatic
heat carries the bean through phases (more in the roast-curve article): drying (moisture leaves, the bean yellows), maillard reactions and caramelisation (it browns, hundreds of aromas are born), first crack (the bean cracks, the structure opens) and the development time after it. the roaster steers the pace of this movement with burner power and air, guided by temperature, time and their own nose.
what the roaster controls
three main levers: heat (the burner), air (the flow) and time. by changing them, the roaster decides which side of the bean to show: emphasise florals and acidity (lighter, a certain pace) or bring out caramel and body (a longer development). the same green lot in different hands gives a noticeably different taste — which is why roasting is authorship, not a mechanical «heat until brown».
the role of person and instruments together
modern roasting is a dialogue of intuition and data. instruments and the curve on screen show what's happening each moment (the rate of temperature rise, the crack point), while experience and taste tell you when to add or cut heat and when to drop. after roasting comes an essential cupping: did it turn out as intended? if not, the next batch's profile is adjusted.
