most people drink their coffee with milk — and that's exactly where half the pleasure or disappointment hides. a good milk drink isn't «espresso topped with milk» but a precise balance of concentrated coffee and properly steamed milk, where neither the coffee nor the milk beats the other but they merge into a third, sweet taste.
what happens during steaming
steam does two things at once: it heats the milk and whips air into it. the milk proteins unfold and wrap around the tiny air bubbles, stabilising them — you get microfoam: silky, glossy, with no separate bubbles, pouring like paint. the goal is exactly that texture, not a dry «cap» of foam on top. and the key bit of flavour physics: milk sugars (lactose) taste sweeter when heated to ~60–65°c; overheating past 70°c breaks down the proteins and gives a «cooked», slightly sulphury note you can't fix.
cappuccino vs flat white vs latte
the difference is the amount of milk and the thickness of foam over the same espresso (usually a double shot):
- cappuccino — less milk, a noticeable, dense foam layer on top, the most pronounced coffee
- flat white — a little more milk, a thin layer of microfoam, a velvety balance of coffee and milk
- latte — the most milk, coffee soft and in the background, almost a «milky» drink.
cup size is a consequence of the ratio, not the essence of the drink. the same flat white in a big cup won't become a latte if the ratio holds.
which coffee sings under milk
milk adds sweetness, body and fat — but at the same time it mutes delicate acidity and fine floral nuance. so for milk you usually want a denser, sweeter, chocolate-and-nut bean (often a medium or dark roast, or a dedicated espresso blend): it «punches through» the milk and stays recognisable. a bright light filter lot often just gets lost under milk — its fine notes aren't worth it, and you get an expensive, faceless drink. that's the answer to the common «why does my expensive single origin taste like ordinary coffee in a latte».
plant milks
oat became the default alternative for a reason: it has enough protein and fat to give microfoam similar to dairy, and its own cereal sweetness that suits coffee. «barista» versions are specially balanced for steaming and don't split. soy foams reasonably well too. almond and coconut are trickier: less protein, and they curdle more easily against hot espresso's acidity (a lower temperature and pouring milk into the coffee rather than the reverse both help).
at home without a steam wand
even without a pro machine you can get close to cafe texture. heat the milk to hot but not boiling (~60–65°c) and whisk it: with a handheld electric frother, or vigorously in a french press (pump the plunger up and down a dozen times), or even in a sealed jar (shake it, then 20 sec in the microwave). you won't get perfect glossy microfoam, but a velvety, pleasant texture is entirely doable.
a few practical details
- cold milk foams better than warm (more time to «catch» air before it heats)
- the fattier the milk, the more stable and sweet the foam
- before pouring, tap the jug lightly on the table and swirl it — that pops the big bubbles and leaves smooth microfoam
- surface art (latte art) is a nice bonus, but what matters under it is the texture, not the picture.

a milk drink is balance and texture, not «coffee plus milk». use a denser bean, don't overheat the milk past 65°c, aim for a paint-like texture rather than a dry cap. even a simple home coffee with properly steamed milk starts to taste like the cafe's — while an expensive light single origin is better saved for a black cup, where it opens up fully.
