milk in coffee isn't just «to make it lighter». it adds sweetness, body and that silky foam we love in a cappuccino. swap dairy for a plant drink and the cup changes — so it helps to know what to expect.
why foam happens
proteins hold the foam, while sugars and fats give sweetness and body. cow's milk balances all of this naturally, so it steams easily and predictably. plant drinks have to be chosen: some are high in protein, some in starch, and they behave differently.
oat
today it's the barista favourite. it's naturally sweet, makes a dense creamy foam and barely argues with the coffee's flavour. look for a «barista» label: those add a little oil and stabilisers so the foam holds and the drink doesn't split against hot espresso.
soy
closest to dairy in protein, so it foams well and gives a full body. the catch is that it can curdle with acidity and heat, especially against a bright, acidic espresso. steam it a touch cooler and pour it in slowly.
almond, coconut and the rest
almond is light with a nutty note, but foams little and can taste watery. coconut brings its own flavour that doesn't suit every coffee. these are more «for the mood» than a base for latte art — though barista versions of them exist and behave better.
steaming and foam
the principle is the same as with dairy: let a little air in at the start, then spin the milk into a whirlpool to break up the big bubbles. plant drinks usually prefer a slightly lower temperature — overheating kills the sweetness and adds a cooked note. if the foam won't come, start with barista oat: it's the easiest route to a good cappuccino without cow's milk.
pairing with the bean
a darker, chocolatey roast is a great match for oat and soy. with a light, berry-forward coffee, plant milk can add a sharp edge — use less milk, or a calmer blend. taste them side by side: the difference between drinks shows up right away.
